Ask ten people in Pune for the best burger in the city and you’ll get ten answers and at least one argument. That’s fair, because “best” depends on what you care about. So instead of another ranking, here’s the checklist we use, and how the burgers at Brioche & Beyond stack up against it.
1. The bun has to hold the line
A burger lives or dies by its bun. Too dry and it crumbles. Too thin and it goes soggy before you’re halfway through. A soft, slightly sweet bun that can soak up sauce without collapsing is the goal.
How we do it: every one of our 15 burgers comes on a brioche bun. It’s literally in our name.
2. The filling needs real crunch or real juice
For a fried chicken burger, the test is the crunch. You should hear it. For a patty, it’s juiciness.
How we do it: most of our burgers are built on crispy fried chicken. For a smashed patty, the Grilled Cheese Burger (₹369) uses a smashed chicken patty. There’s also panko-crumbed fish, fried shrimp, paneer and mushroom.
3. The sauce should have personality
A great burger has a point of view. Plain mayo and ketchup is fine. A glaze you remember is better.
How we do it: pick your style. Nashville hot oil seasoning, sweet and smoky barbeque, tangy buffalo, sweet and spicy hot honey, Korean, or the in-house Caesar salad on our Crispy Caesar Chicken Burger.
4. Toppings in proportion
Lettuce, tomato and cheese should support the filling, not bury it. Every bite should have a bit of everything.
How we do it: our chicken burgers keep it to lettuce, tomato and cheese, so the chicken and the glaze stay the headline.
5. Size and value
The best burger in Pune shouldn’t require a payday. It should also fill you up.
How we do it: 13 of our 15 burgers cost less than ₹300, starting at ₹159. If you want a big one, go for the Nashville Chicken Stacker (₹349). We’ve put the full price list in our guide to affordable burgers in Pune.
6. The room matters too
A burger tastes better in a place you want to be. Good light, a comfortable booth and friends across the table all count.
How we do it: red walls, striped diner booths, a glowing “Foodgasm final boss” sign and a chalkboard at the door that says it best: happiness comes from good burger. See the space on our Kothrud café page.
Put it to the test
The only way to settle the best-burger argument is to eat. Compare every burger we make on our burgers page, then come and judge us in person. We’re in Gujarat Colony, Kothrud, open 11 am to 11 pm, Tuesday to Sunday.
